Introduction
It is important to have knowledge of Home Economics and the science of nutrition since they have become critical. Advocating for public health needs courage and enough resources to be able to convince people how much nutrition will work for them. The focus of this dissertation will be on the development of a curriculum which has a relation with Home economics education and it will be implemented in the UAE secondary level of education (Ridge Kippels & Farah 2017). This area has many opportunities to develop a kind of visionary approach to education for the sake of a future-oriented sustainable development, improving the quality of a life for an individual, family, society and also globally. This research will concern advocacy for using evidence in public health nutrition policy making to develop a home economics curriculum for the uae secondary level of education. This research will look into the nutrition policymaking of UAE and advocate for a Home economics curriculum which will be incorporated in education to at least bring a change in learning especially because their nutrition classes have just been in the International British schools.
Public health education is the act of improving the community and individual health through education, making policy and doing research about the disease that affects humans in order to keep safety and good health. Social and organizational issues provide health information to people. The systems of healthcare are working hard to achieve goals which include the safety of the patient, patient care and care delivery that is collaborative (Eastwood, 2013). A lot of costs are being incurred in order to sustain life. There are medicine advancement and newly developed technologies which have been invented in the community in order to prolong life whereby there can be prolonging of dying period. This happens when an individual is in a coma that is irreversible and in vegetative states where there is prolonged pain and suffering.
Machines and antibiotics that are advanced weapons that are being used by the physicians in order to extend the life of a person. The healthiest foods are so costly to purchase. These types of food include a healthy diet like the one which is rich in nuts, vegetables, fish and fruits. The following provide health care: Nursing homes, home health agencies, hospitals, hospices, and health maintenance organizations and they are supposed to advise the patients on the type of foods that they should take (Eastwood, 2013). Some of the drugs that are prescribed by the doctors are very expensive to purchase like Soliris which is an effective drug that is used to treat paroxysmal nocturnal hemoglobinuria. We have a theological distinction that is theological and believes that life is a gift from God and humans should not destroy it deliberately. The patient has a moral or ethical duty and right to accept life-sustaining or ordinary treatment.
National Context
Food and nutrition classes are offered in majority of the International British schools that are located in Dubai and Abu Dhabi. These are the areas where UAE has implemented Health education curriculum and my part has been to teach home economics in Al Ain. It will be necessary to check the current state of things in how the curriculum has been of help to the students and whether they are actually practicing the same in their today lives.
The schools offering Food and nutrition classes are committed to creation of healthy choices of meals for the students. The curriculum has been able to show that providing a child with the right choice of menu will promote good health and also help in general academic success. The choice of food is according to the global nutrition standards which meet the requirements of the Department of education and knowledge. Qualified dieticians are involved in preparation and analysis of the menus which are also in line with the requirements of each age group. It is to make sure that food is healthy and nutritious fitting the growth of the child and the needs for development as well.
The schools also ensure that the cold and hot lunches get prepared and planned so that they meet the overall plan of assorted fruits, wholemeal grain, and vegetables. It is the commitment of the curriculum to teach healthy living and to ensure healthy eating and engaging with the students. Generally, UAE has put much resources to the provision of food and nutrition settings in classes for the students who benefit from the same.
Area of Interest
I currently teach Home economics in a school in Al Ain. It has so far been a good experience getting to have the students plan a menu for themselves for a day which will be healthy. I have realized that food and nutrition education goes beyond the mere dissemination of information. There is much that the students desire to learn more practically than theoretically. The educational strategies that I have focused on are a combination of evidence-based and also behavioral which have involved active participation of these students in the reinforcement. My main aim when teaching in Al Ain is to build healthy practices that are related to food.
My design of the learning activities has had to adequately fit the particular objective that I want to achieve by the end of the class. Some of the activities that I have been involved in include demonstrations for instance showing the students how to wash their hands clean, table manners and also preparations for nutritious snacks. Another crucial activity is conducting role plays which have been used to explore the current perceptions and attitudes as well as how to deal with any potential scenarios like resisting junk foods. Giving students stories has helped to address the problems in a better way, the probable causes like food waste which have been effective in helping to learn better preservation methods.
I have also been able to make analysis of several case studies which have been good for identification and also understanding specific situations for instance a case where a family is not consuming nutritious foods. Case studies have helped students identify wrong measures that families put to preparation of foods and the habits that they portray which need not be exposed. Talks and presentations have also been helpful as well as games that require brainstorming hence more and better ideas, opinions and also experiences.
My interest in this research is to find out how other students and schools have been responding to this curriculum. I will conduct the research to find out what other 10 schools that have the same curriculum have been up to and what is their take concerning appropriate food and nutrition. This way, I will be able to depict whether the curriculum has been of help to the individuals who learn or not.
The Study
This study will explore the perceptions of the practitioners towards a healthy life in that the home economics curriculum has been of help to the students who are taught. The main practitioners in relation to this education are school principals, head of departments and the parents. In this study, I have formulated questions for the interview and discussions that I will conduct with these principals. The questions will help to get accurate data about what they think concerning the curriculum and whether it has been of use to the students. The learning objectives that will be considered include what students should know or understand by the end, whether food and nutrition education needs to be extra-curricular or be part of the national curriculum or whether it should be integrated as independent subject. It will also be important to recognize how the content will be adapted to local context and culture for use in the everyday life, whether there is requirement for teacher training and special materials and what other facilities may be required.
Learning Outcomes
The learning outcomes that I should confirm from the main stakeholders of the study include:
Application - Students should be able to choose, demonstrate, implement and perform what they have been taught from the course. They should practically be able to plan their own meals that are nutritious an for healthy living
Knowledge - learners should be capable of defining, listing and recognizing all the practices in the course. They need to be able to know all the terms regarding nutrition such as calories, fats, vitamins and minerals and also identify their specific amounts in foods.
Understanding- The learner should be able to characterize, describe, explain and identify any operations in food and nutrition studies. It is to mean that the students should have the ability to put foods into their categories whether they are proteins, carbohydrates or vitamins in order to know what their plan will be for the meal menu.
Analyzing -learners in the end of the course should be capable of categorizing, comparing and differentiating the applications of food and nutrition studies. Analysis of the foods should be able to ensure monitoring of fats in the body hence will be able to recommend the appropriate foods for the individuals.
Evaluating- a learner of the course should assess, evaluate and rate operations in home economics studies. This is such that the students will be able to perform rational evaluation of meals and their appropriateness according to time and age of the person to eat.
Creating- learners should have the ability to construct, design and formulate their own creativeness in film studies using skills gained. It will be important to measure the creativity of learners by testing them to formulate their own menu with proper requirements that are needed for nutrition science that will enhance healthy living.
Background
My idea is to look at the New Health Education in United Arab Emirates curriculum which is currently implemented in 10 schools that are part of the Emirates. The idea is to find out if students who are currently learning this curriculum are making an impact of changes to their approach to health. Would they prefer to have a more practical approach in learning about health related topics. Would they prefer to have a cookery room.
